If there is one thing that I have inherited from my dad, it is surely my love of food. Do certain foods ever remind you of a special person? In my family, there are a few dishes that will always remind me of our dad (and I know my sisters would agree). Whenever he is visiting we always try to have one of the following:

  • Eggs Benedict
  • Grape Pie, yes grape (it is by far my favorite)!
  • Texas Hot Sauce
  • Sloppy Joe Sandwiches-no can here!
  • Raisin Filled Cookies

Today I decided to make Raisin Filled Cookies. It’s definitely a treat as they are a little time consuming, and I think…maybe…just maybe I’ll pack up a few and send them south. Just a few.

Here’s Gram’s good old recipe…

And here…are the cookies!

(makes about 30 larger cookies)
2 brown cups sugar
1 cup butter
3 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
5-6  cups flour (plus more for dusting), consistency of sugar cookie dough

1 cup raisins
1 1/2 cups water
1 cup brown sugar
2 TBS flour
1 teaspoon vanilla
Maybe a little splash a spiced rum…if you’re feeling it…if not…forget it!

Prepare filling by combing all ingredients in a pan. Boil until mixture thickens slightly. Cool completely.

For the cookies-Combine sugar and butter, until fluffy. Add eggs and vanilla. Add sifted dry ingredients until dough just comes together. Refrigerate for 30 minutes.

Assemble-Roll out cookie dough on a lightly floured surface. Using a round cookie cutter, cut out shapes. You can either use two smaller sized discs to make one cookie by filling the cookie with the cooled raisin mixture OR you can fill one larger disc with raisin filling and fold it over. I prefer the double cookie sandwich look. See…
