A Not So Scary Breakfast

I can’t really complain about this Monday…a  March snowstorm on the way and the school kiddies went home early. This afternoon is much appreciated, however I am 100% ready for spring summer.

Anyhow, I wanted to share my “weekday” breakfast with you. No…it’s not donuts. It’s a Green Monster smoothie. What makes it green you ask? Spinach!

Alright, I know what you are thinking-“Spinach in a smoothie? Yuck!”

One might wonder…How did your green monster smoothie addiction start? I found that I was hungry 10 minutes after eating cereal and eating a larger breakfast made me want to crawl back into bed and take a nap! I saw a version of this online one day and decided to blend it up. Matt  jumped on the bandwagon, well…because I stopped buying cereal! But don’t feel bad for him…Now we actually crave theses smoothies! Matt even wants to bring our blender on vacations-so there is your proof of this smoothie’s deliciousness.

When I first started making these smoothies I made them with orange juice to sweeten them up a bit. One day I ran out of OJ and realized they were just as tasty-with far less sugar. I also have made them with baby kale before, equally as delicious. Honestly, I don’t even measure ingredients anymore and I have been known to toss in a few curve balls once in a while (avocados, fresh berries).

There you have it. Cheers to a satisfying breakfast!

Here’s  a general idea on how to make my (not so scary) Green Monster smoothie:

Put all of the following into a blender (no particular order):

1 banana

A generous handful of fresh baby spinach

A heaping scoop of plain Greek yogurt (I use low-fat Chobani)

1/4 Coconut Milk (for sweetness)

1/2 cup Unsweetened Vanilla Almond Milk

About a cup of frozen mango

Blend until smooth, and presto! A delicious way to start your day.
