Back to my regular routine

This weekend was quite an adventure and a great end to the track season. Matt and Tank had to hold down the fort, while I was attending the state track meet with a few of our girls. One of our senior runners came home as a state champion, and our other girls competed in a great relay race-which was an awesome experience for them all. Couldn’t ask for more than that!

Now that the season is officially over, it’s time to get back to my regular workouts and kitchen adventures-I can’t wait…obviously (see below).

I had to giggle last night when I got home and Matt had mentioned that there was literally nothing for breakfast in our house…this no exaggeration. He ended up eating some cream of wheat…which who knows how long that has been in the cupboard-ick. So…feeling slightly sorry that I had left with the cupboards so bare, I woke up this morning and baked up a banana-pecan oatmeal skillet dish (which was inspired by one of my favorite blogs-PBfingers).

It was a feel good breakfast that had very little sweetener and was surprisingly approved by both Matt and his brother(surprising because it wasn’t filled with sugar and butter).


It came together much quicker than I thought. And with a little maple syrup drizzled on top, it was a great way to start the day.


Banana-Pecan Skillet Oatmeal
(serves 6, unless Matt is eating it…then it’s more like 4)

1 1/2 cups rolled oats
2 TBS coconut flour (you could easily substitute regular flour-I just like the coconut flavor/sweetness)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup almond milk
1 egg
1/4 cup maple syrup, plus more for drizzling
1/4 cup plain yogurt (I used Greek)
1 ripe banana, mashed
1/4 cup chopped pecans

In a larger bowl, combine the oats, flour, baking powder, salt, and cinnamon. Add the wet ingredients. Stir in chopped pecans. Pour into a slightly greased (sprayed) skillet or dish. Bake at 400 degrees for 20 minutes.

Next time I might even add a few currants or dates for a little extra chew (thanks John!).

20-30 minute run with a little leg stregthening
I really need to get back into the swing of things. This week I am in a corporate challenge with some girls from work-I’m running a 5K and a mile relay…this could be interesting seeing how I’ve been a little slacking on the workouts lately.
