Second of all…Happy 13th Birthday to my nephew, Joshua! Where the heck has time gone?!
Alright, here we go…
I absolutely love living in the Finger Lakes Region of New York. We have beautiful lakes, great lakeside towns, wineries, farmers’ markets with tons of local produce/foods, and hundreds of restaurants that serve up fresh, local dishes-delish!
Yesterday, Matt and I decided to take a little day trip to visit his parents, who were camping near Watkins Glen. It was pretty windy and cool up at their campsite, so we decided to head into town and grab some lunch at a local brewery. I filled my belly with some stuffed banana peppers and Pumpkin Thai soup.
After having lunch we decided to drive up Seneca Lake to see what was happening at a few of the wineries.
My pictures really don’t capture how beautiful it is on the lake. We really are kind of spoiled.
By the time we got back to camp, it was time to eat again (I think that’s mostly what you do when you camp….I should love camping)
Matt cooked up the spiedies (I’ll explain in a minute)…
While I attempted to stay warm by the fire.
For all you non-upstaters…
spiedies: (n) meat (chicken, pork, lamb) that has been cut into small pieces, marinated, and traditionally served on bakery style Italian bread (although they also are also delicious on salad), see….
I put ketchup on mine…but for most people, I think that is against the rules.
You can find spiedies at practically every grocery store around these parts…but for those of you not from around here:
Spiedies My Way
Chicken breast (any amount to feed your crew), cut up into bite-sized pieces
Lots of Italian dressing (I make my own using Good Season packets)
Lots of fresh chopped garlic
In a glass dish mix chicken, Italian dressing, garlic, and lemon juice. Marinate in the refrigerator at least overnight. Grill up on skewers or a grill pan. Serve with fresh Italian bread (and ketchup…I won’t tell).
