I wanted to share with you what filled my plate this rainy evening. Mac and cheese is so comforting, and I love jazzing it up with different kinds of cheeses, pastas, and other yummy things.
Honestly, I know that this doesn’t look that fabulous…but let me fill you in (it’s one of my favorite versions)…
This mac is cheese is made with my basic base that I always use (see below), BUT instead of using same old boring pasta, this is made with fresh tortellini (filled with cheese and sausage), oh…and I tossed in some leftover chicken.
The verdict: one big YUM!
Here is the base for all of my mac and cheese dishes that I make…
1/4 cup butter
1/4 cup flour
1 3/4 – 2 cups milk
8-16 oz cheese (depending on how cheesy you like)
pinch of ground nutmeg
In a sauce pan, melt butter. Whisk in flour and let cook for a minute or two. Slowly whisk in milk. Add salt, pepper, and nutmeg. Stir in cheese and mix until melted.
*Toss with your favorite pasta and bake in the oven at 375 for 30 minutes
