Overnight Oat Addiction

Good Morning! Today is the start of spring break! Can you sense my enthusiasm? ! I love my job, I really do!-But I  absolutely love the feeling of doing whatever I please on a day that I would normally be working. Tank also appreciates the quality time we get to spend together, so we started the day off doing something he loves…

Bright and early this morning, Tank and I went for a walk to our local “park”-aka: the Trout Ponds. Taking Tank for a walk is often a humorous event. Tank is part lab and (to my best knowledge) part Snuffleupagus. He loves the Trout Ponds. And although it is an extremely small park that we visit often, Tank could spend hours sniffing his way along the water. This is not an exaggeration, and today I have documented proof:

I am pretty confident that Tank didn’t see much of the world around him this morning.

After returning from our walk it was time to eat. Last night I prepared some overnight oats for Matt and I to have for breakfast. Overnight oats are something that I recently discovered and have formed a slight addiction for. I have never been an oatmeal fan, but I am definitely a fan of these. They are quick to assemble and make for an easy, delicious breakfast. Last night I made Peanut Butter Cup oats. If you love peanut butter cups as much as I do, then you will love these!

Peanut Butter Cup Overnight Oats

3/4 cup rolled oats
1 TBS cocoa powder
1 TBS chocolate protein powder
1 1/2-2 TBS peanut butter
1 TBS Chia seeds (optional-but they have nutritional value and thicken things up)
1-2 TBS honey (depending on how sweet you want it)
3/4 cup unsweetened almond milk

Stir everything together in a bowl. Cover with plastic wrap and refrigerate overnight. In the morning, add some more milk. Top with whatever you have in your pantry-I used coconut, pecans, and dark chocolate chips.

Peanut Butter Cookie Overnight Oats

3/4 cup rolled oats
3/4 cup unsweetened almond milk
1-2 TBS peanut butter (I prefer crunchy for this one!)
1 TBS Chia seeds (optional-but they have nutritional value and thicken things up)
1-2 tsp of brown sugar or honey

*recipe adapted from PBfingers

Stir everything together in a bowl. Cover with plastic wrap and refrigerate overnight. In the morning, add some more milk. Top with whatever you have in your pantry-For this I used coconut and pecans.
