Corn and Bean Salad

This post has been sitting on my computer for nearly two months–a whirlwind of a two months. 1 house sold, 1 house purchased. Moving out, moving in. Boxes, boxes….and a puppy. Another puppy. Meet Jack. The good news is that we are all settled in our new home, which is nestled on the hillside off of a country dirt road. The better news is we are finally settled in (I am never moving again, ever). And the best news yet…I am back! And now that I have some time to get to this post, summer is in full swing. Yippee! Beautiful days filled with sunshine, comfy clothes, and evening strolls. I love it. What else do I love? Summer salads. […]

Mother’s Day Brunch

Happy Mother’s Day to all of the mommies out there! This morning we hosted our annual mother’s day brunch. We couldn’t have asked for a more spectacular day. Blue skies, warm air, delicious food, and our mommies. Mother’s day favors for the mommies…beautiful Gerber daisies for beautiful ladies… Story time… This spring, despite my best efforts to encourage her otherwise, a mama birdie decided to build a nest on our front porch. She was quite persistent in her choice. And after a long battle, she won. We have endured several weeks of dodging the swooping mama bird every time we stepped out of our door. Tank has decided to start using an alternative exit for fear of being taken out […]

Celebrating a Year

Our sweet Julianna is officially one!  We celebrated this past weekend with family.   Birthdays are kind of a big deal in our family. We celebrate everybody’s birthday and let me tell you, we sure know how to celebrate! Lots of delicious food, an always homemade cake, and family.   Being one, however, is a milestone that deserves an extra pinch of fancified festivities, don’t cha think?-who am I kidding? Julianna is most likely going to have some pretty spectacular birthdays for many years to come.   This year we celebrated in style. Pink style.   Pink puffs…   Pink candies…   Pink straws… Pink flowers…   Pink everything. Including her cake. Yes-that is HER cake (the bigger one behind […]

A Year Later

It was about this time last year that I began nesting.   And when I say nesting…I don’t mean cleaning and organizing every corner of my home. Naturally, I was stocking my freezer and baking up a storm. Perhaps I was just worried that once the baby arrived I wouldn’t have time…but I am pretty sure this was just my unusual way of preparing for our new life.     A week before Julianna arrived I spent a glorious spring afternoon rolling, filling, and pressing over 80 pierogies. Matt couldn’t help but find it all a bit entertaining. But let me tell you-this pierogi stockpile was one of the smartest things I ended up doing! With my freezer filled with […]

Chocolate Peanut Butter Protein Truffles

Hello, beautiful. That’s right. That is a truffle. An honest-to-goodness good for you truffle. That’s what I’m calling it, anyhow. A fluffy, chocolatey, peanut buttery truffle. Let’s be honest, of course. If you are expecting a real truffle, filled with cream and sugar-I will stop you right here. This truffle is packed with protein powder, peanut butter, and cocoa. There is no added sugar (I swear you won’t miss it one bit), minus the teensie two ounces of melted chocolate chips. And it all comes together with a splash of coconut almond milk. I’ve been struggling a bit with workout motivation. After training for my half-marathon in February, the days of forcing myself to go outside for a brutally cold […]

Baby Eats:Eleven Months

Spring. It is spring, right? Yesterday morning when I turned on my car it was a whooping five degrees. Julianna is over the snow and brutal cold. She avoids putting on her coat, rips off her warm winter hat, and upon entering our house, immediately removes her socks and wanders around barefoot.   I hear ya sister…I am over it, too.     When did she get so independent, anyhow? Her little protests are a true indicator that she is indeed growing into her own little being. Eleven months old. How did that year fly by in the blink of an eye?   Speaking of the little cupcake… Jewel adores her big brother…That would be her attempting to give him […]

St. Patrick’s Day Throwback

In honor of St. Patrick’s Day, here is a throwback to my very first post! Happy St. Patrick’s Day everybody!  I take pride in being a smidge Irish, so I had to celebrate this week with a tasty treat. I also love cupcakes, so what a great way to kickoff my new site. Check out these cupcakes! Guinness beer chocolate cupcakes topped with…Bailey’s Butter Creme Frosting…AKA: Irish Car Bomb Cupcakes. They were so much fun to make and quite delicious. Matt and I also discovered how well the frosting pairs with Thin Mint Girl Scout cookies-I know…oink. Enjoy! Today’s Workout: Insanity Plyometric Cardio Circuit Question for the day: What is your favorite Irish food?

St. Patrick's Day Crunch

Magically Delicious St. Patrick’s Day Crunch

Before we begin, I must warn you (otherwise it’s just not fair). This snack is ever-so addicting. For Christmas, a co-worker of mine makes a version of this snack for everybody. She fills it with pretzels, and M&Ms, peanuts, and cereal, and places it in a generous-sized tin for us to (I am assuming) share. I generally don’t share. And I generally come quite close to polishing off the entire tin before actually arriving home from school. Eeek! So there you have it. Don’t say I didn’t warn you. This time I decided to whip up this most spectacular treat with one of my childhood cereal faves-Lucky Charms. Sweet cereal, hidden charms of magical, marshmallow goodness. I could easily top […]
