Remember those cherries I mentioned in my post about going to the farmer’s market?
Here’s what happened…
This is a glorious combination. And again-reinforces my belief that is OK to have cake for breakfast…lunch…or dinner. I like to think that pancakes are a little healthier alternative…no frosting right? But the truth is…after drizzling the entire plate with melted butter and maple syrup, and a dusting of powdered sugar, I think it all adds up in the end. Oh well. I’ll continue to love them anyhow.
I am not sure where I got the idea to toss some cherries and vanilla in my pancakes. It was probably because I will still dreaming of the cherry-vanilla cake I made last week. With that long gone and cherries on my counter, it just seemed like a grand idea. And it was. Oh, it was!
Here (click) is my go-to recipe for pancakes.
To make these pancakes, I used the recipe above, then added 1 teaspoon of vanilla bean paste (if you bake a lot I highly recommend buying) and tossed in some fresh, seeded/chopped cherries. Simple and delicious.
