Happy Monday night! Tonight I needed to use up some bacon that I had leftover from the weekend. Oh darn! I don’t know about you…but bacon is a pretty popular food choice in our house, along with pancetta and prosciutto. We always have one of the three in our fridge. Pasta is also pretty popular, and when you put the two together (mixed with some cheese) you can’t go wrong! This plate of deliciousness is called Pan-Seared Ravioli with Peas, Bacon, and Spinach.
Here’s what you need:
1/2 pound of bacon, sliced
1 package of fresh ravioli (20 0z)
2 cups frozen peas
3/4 cup heavy cream
3 cloves minced garlic
3 large handfuls fresh baby spinach
1/4 cup pasta water
1/2 cup freshly shredded parmesan cheese, plus some for topping
1 teaspoon lemon zest
salt and pepper to tast
In a large skillet, crisp bacon over medium-high heat. Transfer to paper towel to drain. Clean out the grease from the pan, but leave about 2 tablespoons in the pan.
Cook ravioli in a pan 1-2 minutes. Add ravioli to the pan used to cook the bacon. Fry ravioli until crisp and brown. Reserve 1/4 cup of pasta water.
In the same pan, add heavy cream, peas, and garlic. Simmer for 2-3 minutes. Add spinach and pasta water. Continue to simmer until sauce thickens. Add half of the bacon and parmesan cheese, stir. Turn off heat and stir in lemon zest. Salt and pepper to taste. Serve topped with extra bacon and freshly grated parmesan cheese.
