Whew! I apologize for my lack of posting lately. Our track season is in full swing and things have been quite busy for both of us. Even Tank is feeling a little shorted on attention…the poor guy is relying on the comfort of his toys to get him through the tough times (and yes…he really sighs-it’s hilarious).
With that being said…last night was all about relaxing at home. We spent some quality time with (the clearly attention deprived) Tank and had some fantastic homemade blueberry pancakes. I love pancakes. Real pancakes. And I should admit, in this house we have them on a regular basis.
These pancakes remind me of diner pancakes (in a good way). They are light and fluffy (hence the name), and form a perfectly crispy crust. This pancake recipe is one that my mom and I have made for as long as I can remember. It is for sure a keeper. We like fresh blueberries in our cakes…but you can add whatever you want!
Ooooo…ahhh….check out that bite!
Light and Fluffy Pancakes
2 eggs, separated eggs
2 cups buttermilk
1 3/4 cups flour
2 teaspoons sugar
1 teaspoon baking soda
2 teaspoons baking powder
2 tablespoons melted butter
Beat egg whites until stiff, set aside.
Beat egg yolks and blend with buttermilk.
Add ingredients and mix until smooth.
Stir in melted butter.
Fold in egg whites.
Pour on a piping hot griddle (sprayed with cooking spray…or butter…)
