Despite the cooler weather we are having in upstate NY, I noticed some signs of spring this morning…
Hopefully warmer weather is on the way! I am itching to get outside and run…and yes, cold weather stops me from running outside. Why? I am a wuss. For real. Something about layering up and freezing ears….it’s just not for me.
For those of you that have been reading, my overnight oat addiction is still going strong. Friday night I made Mexican chocolate overnight oats (for Saturday), which were inspired by a Mexican chocolate protein shake I found on Pinterest. The cinnamon/chocolate combo was deliciously warming (just what I craved for this chilly day!)-the next time I make these oats, I might even try adding a pinch of chili powder or cayenne pepper for a little extra pow.
Mexican Chocolate Overnight Oats
3/4 cup rolled oats
1 TBS cocoa powder (or chocolate protein powder)
1/4 tsp cinnamon
1 TBS honey
1 TBS Chia seeds
Splash of vanilla
3/4-1 cup almond milk
Stir everything together in a bowl. Cover with plastic wrap and refrigerate overnight. In the morning, add some more milk (if needed). I topped mine with coconut flakes, chopped pecans, and chopped dark chocolate chips.
-Take Tank for a long, long walk
-40 minute cardio/strength
