There is probably something you should know about me. For as much as I love sweets…I absolutely love “buffalo” flavored dishes…buffalo chicken wing dip, buffalo chicken (pizza, wraps, sandwiches, fingers), buffalo burgers, buffalo style shrimp, buffalo cheese, buffalo sauce mixed with Greek yogurt (veggie dip), and this: Buffalo
Chicken Turkey Chili. I have made Chicken Wing Soup before, but that was loaded with cheese and heavy cream…delicious, yes!-but sometimes I just want something comforting that doesn’t make me feel bad!
This soup satisfied my buffalo wing craving and I still felt good after eating it.
Buffalo Chicken Chili
1 pound ground turkey (or chicken)
1 TBS oil
1/2 cup celery, diced
1/2 cup carrots, diced
1 clove garlic, chopped
1 (15 oz) can diced tomatoes
1 (15 oz) can cannellini beans
1 cup beer (or a total of 2 cups chicken broth)
1 cup chicken broth
1 tsp cumin
1 tsp paprika
1/2 tsp oregano
1/4 tsp cayenne pepper
1/4 – 1/2 cup hot sauce (depending on how much heat you like)
salt and pepper to taste
Blue cheese and parsley for topping
In a pot, brown ground turkey and set aside.
Heat oil in the pot and add celery and carrots. Cook until veggies are soft-about 10 minutes.
Add garlic, cook for about 30 seconds-being careful not to burn.
Add beer/broth to deglaze the pot.
Add turkey, tomatoes, spices, and hot sauce. Let simmer 15-20 minutes.
Salt and pepper to taste.
Serve with crumbled cheese and freshly chopped parsley.
