One thing that I love about the summertime is that I can quickly throw a salad together using fresh, local ingredients-it’s even more exciting when those ingredients come from my garden.
Last weekend Matt got our garden tilled up and ready for planting. What a guy (seeing how we have a gazillion other things to do around our house)! In all of my excitement I immediately made a trip to the local garden nursery and loaded up on fresh herbs and veggies. Unfortunately I have yet to plant any of it-Julianna is apparently not yet as enthused as I am about getting our garden up and running. She’d rather be held and cuddled. Silly girl.
So although my garden currently sits bare, while holding and cuddling the wee one, I began thinking of all the garden salad possibilities. Immediately what came to my mind was sitting outside on the patio of one of my favorite restaurants (Moosewood), enjoying a deliciously fresh salad topped with the most amazing dressing.
This dressing is full of flavor thanks to a beautiful thing: fresh basil.
How can you resist the sweet taste and smell of those beautiful green leaves?
I sneak fresh basil (and really any fresh herb) in whenever I can. To have it whirled into a salad dressing, amazing.
What I love most about this dressing is that, unlike most salad dressings, it’s pretty darn healthy BUT still has big flavor and is deliciously creamy-meaning it actually stays on your salad instead of collecting into a pool on your plate.
(I absolutely hate that!)
See…it really does stay where it’s supposed to. This picture was taken after running things outside for my photoshoot, setting it up, taking a brief break to feed Julianna, and tossing a drooling Tank a few berries to keep him happy.
Another fantastic quality of this dressing-it whips up in no time (it’s also pretty darn cheap if you are like me and always have these things around the house). And wouldn’t you be all snazzy if you started whipping up your own dressing to bring to barbeques and dinners? I’d be impressed!

- 3/4 cup vegetable oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 cup fresh spinach leaves
- 1/2 cup fresh basil leaves
- 1/2 cup milk
- In a blender or food processor, combine all of the ingredients except for the milk. Blend until smooth.
- With the blender or processor still running, slowly pour in the milk until dressing comes together.
- Store in an airtight container.
- Keeps for one week in the refrigerator (It will separate, shake well before each use).
- Add more or less sweetener/basil to taste.
- This dressing is delicious poured over grilled chicken.
T-Minus two weeks for some new workouts! Looking forward to getting into a regular fitness routine again!
