Chocolate Banana Breakfast Casserole-make at night, bake in the morning.

Holiday Breakfast Casserole

There are two things that have me in disbelief: 1. Jewel is eight months old…check out that cuteness: 2. Christmas is just days away. Where, I ask, has the time gone? Nothing quite beats Christmas morning. Snuggling on the couch with a cup of coffee, sporting my new jammies, and opening presents while the 7th run of A Christmas Story plays in the background (accompanied by a few groans of annoyance-Matt-ahem). I live for the 24 hour marathon-even though I have one VHS and three DVDs of the movie. My love of this movie has gone so far, that I even have a legit leg lamp glowing in my window from Thanksgiving to the first of the new year. Classy, […]

Banana Bread Granola

Before we get started, you must  check out this sweetness… Our sweet, little Jewel turned three months old the other day. What in the world? Impossible. As she continues to grow, she is becoming so alert and active! We spend a lot of waking time in the kitchen-whipping up some delicious treats for when Daddy gets home. I really wouldn’t be surprised if some of her first words were something along the lines of sauté, puree, or chop. A lot of the time it sounds like an episode of Rachel Ray in my kitchen, as I talk Jewel through every step (I guess that’s slightly less strange than talking your dog through blanching his veggies, ha! ). Although she loves […]

Banana-Nut Chocolate Chip Cookies

Banana Nut Chocolate Chip Cookies

These cookies are bananas! For real!….these cookies are seriously DELICIOUS. (And before I forget…make sure you check out the video at the bottom and listen until the very end-it’s pretty bananas as well!) Now I am not one to mess with something that is already quite delicious (take chocolate chip cookies for example), but one day I had this crazy idea. I always put a package of instant vanilla pudding in my chocolate chip cookies…but what IF…what if I added banana cream pudding instead? Oh boy. It was a perpetual battle to stay out of the dough bowl. Thank heavens Julianna arrived before I whipped up these little guys-because not sneaking bites from this bowl of dough would have made […]

Green Monster Muffins (aka Spinach Muffins)

Green Monster Muffin

I am a big fan of muffins. Not only are they delicious and satisfying, they are an extremely convenient snack you can grab on the run…which I am quickly learning is a necessity these days. But a green muffin?! Now that sounds interesting… This recipe is the muffin version of one of my all time favorite smoothies. Which means, yes…these muffins are made with spinach! No worries though, other than the bright green color of these lovely little muffins-the spinach is completely hidden by the sweet taste of bananas and cinnamon, mmm! Not only are these muffins funky and fun, they are pretty healthy too! If you are looking for a creative way to sneak in your veggies, this one’s […]

(not so) Chunky Monkey Peanut Butter Banana Muffins

Not So Chunky Monkey Muffins

I’m back! My new site is complete and I couldn’t be more excited! A huge thanks to Freshy Sites for taking care of everything. A lot has been happening in the time that I have been gone…including one rapidly growing, chunky monkey!-the baby, not me! Aright…well, maybe me too. Lately, this has been one of the most beautiful sights to me… That’s right…overly ripe, mushy, brown bananas. Do you know how hard it is to find such a good looking bunch of bananas at the grocery store? Trust me…I know…I’ve been searching. I have even stockpiled green ones on my counter, impatiently waiting to fill my freezer with bunches of mashed, brown bananas. Why the strange obsession? Ever since I […]

Green Thumb

Today we had quite the project on our hands. It started a little like this: Take one fairly large piece of unused backyard… Add Grandpa’s old tiller, along with some burly manpower… And after some raking, blisters, and sweat…you’ll end up with… A great garden (well…the start of one anyhow)! How did this all come about you ask? Pumpkin seeds. That’s right, pumpkin seeds. Last week Matt came home from work with some pumpkin seeds (inspired by a little friendly competition at work) and this week…we have a garden. A few years ago I started a garden at our house (which included some pretty impressive pumpkins), buuuuut we happen to have a wide range of wildlife in our backyard, including a family of deer who enjoyed […]
