GF Cranberry Almond Muffin

Cranberry Almond Muffins

I’ve been on this kick where I’ve been trying to limit refined sugar and gluten in my life. This is somewhat hilarious and is certainly not a coincidence to the extreme sugar overdose caused by my last post; Peanut Butter Snickers Cake.   I don’t have any diet restrictions as far as gluten goes, and with that being said I have no problem-o bellying up to good slice of cake, or bowl of pasta, or bun on my burger. However, when something as tasty as this muffin comes along and fills that bread-o-licous need in my life, I’ll take it! Because I’ll be honest, my pants are a whole lot more forgiving when flour (and sugar) is outta the picture. With the pop of fresh cranberries, a zip of […]

Lemon Blueberry Muffins

Summer Lemon-Berry Muffins

Our new home has a row of blueberry and raspberry bushes. For the past few weeks, while Julianna is still snoozing, I look forward to grabbing my cup of coffee and heading out to the fruit bushes beside our house with the boys to see what’s ripened overnight. How did I ever live without this? It’s glorious. At one point, I was picking several quarts of fruit daily. And what I didn’t freeze made their way into a variety of baked goods. Mostly muffins. LOTS of muffins. These muffins to be exact… Lemon, Raspberry, Blueberry Muffins (aka Summer Lemon-Berry Muffins). The blueberry only version of these muffins have been a favorite of mine for a long, long time. Tossing in […]

Blueberry and Plum Almond Cake

The end of summer is sort of bittersweet, don’t ya think? Warm summer nights, weekend barbeques, trips to the ice cream stand, and evening walks with my family will quickly be coming to an end. Yet at the same time, I get excited for things like end of summer harvests, the changing leaves, and the crisp, fall days ahead. It hardly seems possible that it’s the end of August. I think I finally realized it the other day, when our local produce shop had a sign out for fresh, organic pears, plums, and butternut squash. I’ve been in denial about the week ahead for some time now (only because I will be trading days spent with my little cupcake […]

Strawberry Lime Infused Mojito

Strawberry Lime Infused Mojito

Hello, refreshing concoction. This past week I have been slightly obsessed with fresh strawberries. They are in season, and they are delicious. One of my favorite summer beverages is a mojito. I was never really a fan of mojitos until we had one while on our honeymoon in Maine. The caretaker of the house we were staying at worked at a restaurant in town and claimed this was his specialty. It was the perfect ending to a long day of hiking and has forever changed my mind about this minty drink. This version of a mojito has a little extra pow with some lime infused simple syrup and fresh strawberries. The lime infused simple syrup gives it a stronger, […]

A workout designed to tone your thighs.

It’s Time

With the “OK” from my doctor and a few hours of consecutive sleep each night, it’s time…time to finally resume a regular workout routine. This past Thursday, I thought I’d give it a go with a nice ‘run’ around my neighborhood. I had been anticipating it for weeks! Ha. It was more like a jog…no, actually it was more like a series of walking and jogging, real slowly. It was pretty defeating considering I stayed fairly active for the last nine months. Let’s be honest, this whole working out post-pregnancy thing is a lot more challenging than I ever expected. It’s really hard to get motivated when a little cupcake wants to snuggle all day (she’s pretty darn convincing!) and […]

Orange Clove Granola

Oh, granola. I have been living off of the stuff. Lately, I find myself in need of an immediate snack. And granola…it’s the perfect cure to my extreme (and sudden) attacks of hunger. The first thing I do each morning after crawling out of bed (completely famished I might add) is mosey down to my kitchen and grab a handful of some homemade granola. I then might toss it on some yogurt for breakfast. Maybe take a handful to work. And usually munch on it throughout the evening when I get home, especially after working out. I told you…it is my survival snack. I love homemade granola because it is healthy, uses wholesome ingredients, and with a good base you […]

Homemade Greek Yogurt

A Fresh Start

I love Greek yogurt. I eat it every single day. No exaggeration. When Matt and I went to my best friend’s wedding in Chicago, we went to this little Greek diner for breakfast one morning and I ordered up a delicious bowl of homemade Greek yogurt. It was the best yogurt I have ever had. Ever. It was thick, creamy, and not at all tart like most plain store-bought yogurts. Ever since then, I have been wanting to make my own yogurt from scratch. But…I never did. I thought I needed some fancy yogurt maker, it would be some tedious process, and then in the end…it wouldn’t turn out. None of the above is true. Everything I used I had […]

Tastes of Thanksgiving

Ahhh, Thanksgiving. A holiday where it is perfectly acceptable to gobble up unfathomable amounts of delicious food and spend some quality, relaxing time with your family. Here are a few things I am thankful for this Thanksgiving season: 1. Family and good health 2. The soon-to-be addition to our family (and the fact that I am one again able to successfully eat-most days!) 3. Stuffing That’s right…stuffing. I adore stuffing. All kinds of stuffing. If stuffing isn’t on the Thanksgiving table, you might as well count me out. Well not really, but I do love the stuff. This recipe is especially fantastic and most tasty (thanks mom!). It’s made with sweet apples and dried cranberries, savory sausage, and a unique […]

Love Me Some Blueberries

Hey everybody! I hope you all had a great weekend. I feel that I had a fairly accomplished day, for a Monday that is. This morning my mom and I went to our favorite blueberry patch and picked some an enormous amount of blueberries. It is probably one of my favorite things about summer. Have you ever read Blueberries for Sal? Best children’s book, ever. My mom and I were chuckling this morning at the kurplink, kurplank, kurplunk of the berries into our emtpy bowls. I am a bit of a blueberry hoarder. I could go everyday for the next week and still not have enough (and by not enough…today I picked 15 pounds and last Friday I brought home 10). I […]

A Friendcation

Hey all! We just got home Saturday night. Last week we spent the week in Myrtle Beach with family and friends. Although the weather was a little iffy the first few days, it was a fabulous way to kick of summer vacation! The beach was beautiful-we entertained ourselves with parasailing, swimming, miniature golf, shopping, and of course relaxing on the beach (that is when the sun finally came out)… A major bonus was that we rented a “pet friendly” house so Tank was able to tag along… As soon as he sees a suitcase being packed, he puts on his best sad face. It is pathetic really. I think he was pleasantly surprised we took him along (even after a long 14 […]
