This is one of those desserts where people are like… “Oh, wow! What did you make?”  Translation: “Oh, she only made cookie bars.” (disappointment)  And I’m like, “Oh, just some cinnamon chocolate bars.” And they’re like, “Hmm….that sounds good!” (obvious skeptism) And then they try them and are like, “Mmmmm!!!” Then I smile. Hey there! Let me just start by saying, YUM.  Half Moon Cookies. Not at all to be confused with black and white cookies.  Unlike black and white cookies, these cookies are chocolate and cakey. Unlike black and white cookies, these cookies are piled high with chocolate fudge and fluffy vanilla buttercream frosting.  And unlike black and white cookies, these cookies are absolutely, fantastically, DELICIOUS.  Hello, beautiful. That’s right. That is a truffle. An honest-to-goodness good for you truffle. That’s what I’m calling it, anyhow. A fluffy, chocolatey, peanut buttery truffle. Let’s be honest, of course. If you are expecting a real truffle, filled with cream and sugar-I will stop you right here. This truffle is packed with protein powder, peanut butter, and cocoa. I also love cupcakes, so what a great way to kickoff my new site. Check out these cupcakes! Guinness beer chocolate cupcakes topped with…Bailey’s Butter Creme Frosting…AKA: Irish Car Bomb Cupcakes. There are two things that have me in disbelief: 1. Jewel is eight months old…check out that cuteness: 2. Christmas is just days away. Where, I ask, has the time gone? Nothing quite beats Christmas morning. Snuggling on the couch with a cup of coffee, sporting my new jammies, and opening presents while the 7th run of A Christmas Story plays in the background (accompanied by a few groans of annoyance-Matt-ahem). Let me start by saying, I have baked this cake twice in two weeks. Twice. Last Saturday I baked this cake to celebrate Matt’s birthday. It was topped with the most fabulous homemade peanut brittle and an abundance of tall white candles. And although the cake was a thing of beauty (seriously-it was pretty sweet), my pictures turned out…horribly. Bah. So this week…I baked the cake again. Yes…just for photos.
