Chocolate Cinnamon Bars

Cinnamon Chocolate Bars

This is one of those desserts where people are like… “Oh, wow! What did you make?”  Translation: “Oh, she only made cookie bars.” (disappointment)  And I’m like, “Oh, just some cinnamon chocolate bars.” And they’re like, “Hmm….that sounds good!” (obvious skeptism) And then they try them and are like, “Mmmmm!!!” Then I smile. Yes, they are just cookie bars. They take no skill to make. But they are SO good, and that is SO a win! Cinnamon Chocolate Bars. Uniquely delicious and a go-to-dessert in my family. Seriously…we all make them, all the time.  The base of this dessert is a buttery, cinnamony cookie bar. Then you take the whites of an egg and paint it across the cookie base that’s been […]

Half Moon Cookies

Half Moons

Hey there! Let me just start by saying, YUM.  Half Moon Cookies. Not at all to be confused with black and white cookies.  Unlike black and white cookies, these cookies are chocolate and cakey. Unlike black and white cookies, these cookies are piled high with chocolate fudge and fluffy vanilla buttercream frosting.  And unlike black and white cookies, these cookies are absolutely, fantastically, DELICIOUS. OK-scratch that, black and white cookies are probably delicious, too. But it’s hard to compete with this recipe. I’ve had this recipe tucked in my recipe box forever. It’s an absolute favorite of mine. And it makes an impressive, crowd pleasing cookie. Actually it makes around 40 large cookies…so a crowd is needed indeed! Oooooor not […]

Christmas Italian Layer Cookies

My Favorite Christmas Cookie

These cookies take two days to make. They require a good amount of ingredients (seriously-six sticks of butter). And they will, this is a promise, leave several dirty dishes piled up in your sink. They are also, without a single doubt, my FAVORITE holiday cookie, ever-making all of the above perfectly acceptable and highly worth the time, and dish soap. I only make them once a year-every Christmas. But fortunately, for all of the work and dirty dishes involved, this recipe makes enough cookies to get us well into February (they freeze perfectly). That is…if we can avoid overeating them in massive amounts. This usually does not happen. Errr. I have zero willpower when it comes to ignoring these delightful […]

Pumpkin Oatmeal Cookies-pumpkin, oatmeal, and chocolate chips make the fluffiest, most satisfying (and almost healthy) fall cookie!

Treat or Treat

Happy Halloween! And that’s right…treat or treat. No tricks wanted here. I want treats.  Preferably pumpkin, too. Thank you! Last weekend my Grammy dropped off this yummy pumpkin recipe for me to try. My grandma is the best cookie maker. I will challenge her to your grandma any day. I am confident she would win. Funny tidbit: My grandma is the reason I am adamant about having a perfectly shaped cookie (she is also the reason I love baking them). When I was younger, my grandparents helped me with 4-H projects, and Grandma-she helped me bake some prize winning cookies back in the day, for real! We would spend a good part of an afternoon baking up cookies to take […]

Everything Cookies

Everything Cookies

Do you ever have days when you come home and find yourself standing in front of rummaging through your cupboard, looking for annnnything to cure your afternoon snack attack? Yea, me too. Hmmm…quite often actually. Snack attack hit me hard the other day. And after standing in front of my cupboard for a solid five minutes, I decided the only way to kill this craving was to whip up some seriously satisfying cookies. So some seriously satisfying cooooooookies (in my best Cookie Monster voice) is exactly what I made. I often wonder what Jewel will think, when we come home from school each day and immediately start baking. Right now I think she is fairly entertained by my play-by-play kitchen commentary. […]

German Chocolate Date Balls

German Chocolate Date Balls

Everybody has a bad habit, right? I have a serious bad habit. And as of this moment, the world will know my secret. I must have chocolate every day. It’s not just even once a day. I dare say, I crave (and eat) chocolate after lunch and dinner, daily. There you have it. It’s most definitely avoidable. I could probably (not) give it up tomorrow. But why? Chocolate is a beautiful thing. And with a creative little recipe like this one, it doesn’t necessarily have to be a horrible thing, either. German Chocolate Fudge Balls. Sounds indulgent and extremely unhealthy…and they probably could be, if it weren’t for this recipe! German chocolate (cake), three majorly delicious players: Chocolate, check. Coconut, […]

Banana-Nut Chocolate Chip Cookies

Banana Nut Chocolate Chip Cookies

These cookies are bananas! For real!….these cookies are seriously DELICIOUS. (And before I forget…make sure you check out the video at the bottom and listen until the very end-it’s pretty bananas as well!) Now I am not one to mess with something that is already quite delicious (take chocolate chip cookies for example), but one day I had this crazy idea. I always put a package of instant vanilla pudding in my chocolate chip cookies…but what IF…what if I added banana cream pudding instead? Oh boy. It was a perpetual battle to stay out of the dough bowl. Thank heavens Julianna arrived before I whipped up these little guys-because not sneaking bites from this bowl of dough would have made […]

avocado cookies

Loving Cookies

I have been loving cookies lately. I don’t know if it’s because they are quick and easy to whip up while Julianna is napping or because I can easily scarf them while multitasking. Probably both. When it comes to cookies, I don’t like to mess around. Cookies are meant to be buttery, sweet, and for most people considered more of a treat than a snack…right? I wouldn’t know. I eat them regularly. So when I came across a recipe that replaced butter with avocados-I was completely intrigued…and skeptical. And because I had several avocados hanging out on my counter, I obviously had to whip up a batch…immediately. This is by far the most unusual cookie I have ever made-and I […]

Oatmeal Banana Cookies

Oatmeal Banana Cookies

Oatmeal banana cookies…I’d like to think with a name like that they’d be pretty healthy! Well…aside from the sugar, butter, and Reese’s Pieces…shhh. I guess I am just hopeful  that the rolled oats, banana, and pecans outweigh everything else. Yep-I am going with healthy. In fact, I’d say these little wonders would go perfectly with a nice hot cup of coffee or tea for breakfast, a cold glass of milk,  or even a post workout snack-they do have protein after all (even if it’s mostly in candy form). Oh forget it… Or you could just eat these cookies anytime, because well…they are delicious! No reason needed. A combination of a few fabulous flavors….soft banana bread, chewy oatmeal cookies, and of […]

Maple Walnut Biscotti

Glazed Maple Walnut Biscotti

It’s that time of year again! One spring sight I love! There’s nothing quite like fresh, local maple syrup…and in upstate NY, we sure have a lot of it. It’s a good thing, too. I use it in just about everything! …baking, dressings, meat marinades, granola, oatmeal, frosting and glazes, or just poured over homemade pancakes and waffles…I think you get the idea. It’s pretty tasty stuff. Over the past few days I thought that I had lost my baking touch. Within three days I had tossed a batch of muffins and cupcakes directly into the trash. The good news is…it was the oven, not the baker (and with a little fixing I was back in business). The bad news […]
