  I’ve been on this kick where I’ve been trying to limit refined sugar and gluten in my life. This is somewhat hilarious and is certainly not a coincidence to the extreme sugar overdose caused by my last post; Peanut Butter Snickers Cake.   I don’t have any diet restrictions as far as gluten goes, and with that being said I have no problem-o bellying up to good slice of cake, or bowl of pasta, or bun on my burger. My science class has been investigating industrial farming and food, and the kids have selected topics that they’re interested in. I’m pretty sure by the end of it all, I’ll have a classroom full of students looking for organic, free-range, grass-fed, farm raised, non-GMO labels on the food that they eat (sorry parents). Wait. What about skittles, and Doritos, and Little Debbie’s? Yeah-alright. Maybe these lessons are actually impacting me a smidge more than them.  Their arguments are pretty convincing. This post has been sitting on my computer for nearly two months–a whirlwind of a two months. 1 house sold, 1 house purchased. Moving out, moving in. Boxes, boxes….and a puppy. Another puppy. Meet Jack. The good news is that we are all settled in our new home, which is nestled on the hillside off of a country dirt road. Hey ya’ll! Avocados have recently been ranking at the top of my favorite foods list. They can be savory, they can be sweet, and they are oh-so creamy. Heeeellloooo you beautiful, versatile, healthy green fruit you. I think this love will surely last-at least for a long while. Especially with a smoothie like this. It’s snowy and cold here, again. Living in upstate NY, I should really expect this during the first week of January. Training for a half-marathon in the middle of winter makes me snarl at the wind as it whips snow by my window (totally self-inflicted torture, I know). Arggg. Have you ever found yourself standing in front of row upon row of the gazillion coffee creamer flavors offered up at the grocery store? It’s ridiculous. There are so many glorious flavor combinations that you can add to your coffee. The thought of indulging in a double-chocolate, salted caramel coffee instantly makes my mouth water and me longing to fill up my favorite mug. Yet-I never leave with one (OK, rarely). A few weeks ago we went out to dinner with two of our friends, for the first time in foooorever, to celebrate Matt’s birthday. Once upon a time we regularly went out with them to eat at swanky restaurants around our area. Pulled Pork Nachos. AKA amazingness on a plate. Twice this summer, at festivals, I experienced this wonderful nachoy concoction. I don’t know who dreamed it up, but I am quite sure we would be the very best of friends. Pulled pork. BBQ sauce. Chips. Melted cheese. Whaaat?! Pumpkin Breakfast Bars

Fall. By far my favorite season. The hillsides transform into perfection, painted by all of the colorful changing leaves… Even autumn weeds turn to beauty as they line the rusted fence of a pasture… I could spend countless hours taking in all of the fall scenery. Complete dork. I know. And I am not ashamed! But my favorite thing about fall, pumpkins. Especially when sweetened, spiced, and baked (duh!).
