The worst cookie ever. That is exactly what this cookie is.
This cookie is too easy and too good. It requires four ingredients, one bowl, and a few quick mixes…with a spoon-no mixer required!
This little cookie has caused quite a big problem in our home, because at any sign of a peanut butter hankering from either one of us (which happens
almost daily), these babies are in the oven in no time flat. BIG problem.
One night we were just sitting down to watch one of our favorite shows: The Big Bang Theory (dweebs-I know) and out of nowhere, a peanut butter hankering attacked. With five minutes to spare, I ran into the kitchen, mixed up a batch, loaded up my oven, and before the first commercial break we were in peanut butter heaven. This is no exaggeration, even if you are a novice baker.
They are simple. They are peanut buttery. They are delicious.
The Worst Ever Cookie (aka…Peanut Butter Cookie)
1 cup peanut butter (I usually use natural. You’ll want to use a good peanut butter because basically that’s all you’ll taste!)
3/4 cup brown sugar
1 large egg
3/4 teaspoon baking soda
I like to sprinkle them with raw sugar before baking. Sometimes I like to add a handful of chopped nuts to the dough for a little extra crunch (you could also use crunchy peanut butter). I have added oatmeal (1/2 cup or so) before as well-equally delicious, more chewy!
Mix all ingredients together. Scoop onto a cookie sheet lined with parchment paper (I use a medium sized cookie scoop). Bake 12-15 minutes at 350 degrees. You’ll want them so that they are slightly underdone (they are much better that way…according to Matt). Let the cookies rest on the sheet for a few minutes. Devour.
